The Easy-Hitch Light-Up Hitch Aligner # JE00600 that you referenced feature a strong enough magnetic base that it will attach to the hitch ball even if it has already been lubricated. If it's bumped during the hookup process it will likely cause enough of a jolt for the rod to release from the ball but they are durable enough to survive.

This wired camera system's monitor does not have a scrolling feature to let you shift the grid lines but you can make vertical adjustments to the camera itself (and also to the two backup sensors on either side of it) to get the best degree of visual alignment and object detection as you back up. I spoke with our installers and they told me that this will happen time to time. They said there are times when the auto manufacturer will have the holes moved just a bit, but they work with them to make it work.
They told me that they use a tool they call an alignment tool. It is a steel rod about a foot long that is tapered on one end. For the 2015 Odyssey, the Draw-Tite Hitch, part # 75270 holes used for installation should align up just right. I spoke with our installers and they said occasionally a trailer hitch will have the brackets with the mounting holes a little off and they will just gently move it back into place. They did say that the most important thing to remember is to only tighten the bolts about half way so that there is some play in the hitch when installing.
